Recipe: Vegan Cornbread Muffins


This article/recipe was a big hit on a previous, now defunct blog.  I'm sharing it again here for those that may be looking for it....

I have many interests, or in some cases mild obsessions, that I plan to share.  The one I am sharing today falls under one of my favorite topics - FOOD!  More specifically, cornbread.  I looove cornbread.  In my opinion, it is an anytime food.  You can eat it as a side to any meal, or alone as a snack.  You can add a condiment, like butter, jelly, cream cheese, etc. or just enjoy it as is.  They are great warm from the oven or once cooled to room temperature.  I can go on and on…. 

3 Year Old Confidence


Another story from the archives, featuring Sunshine....

I was grocery shopping in Trader Joe's with my 3 year old today, when she noticed another girl (about 10 years old), shopping with her mother.  We crossed paths a few times in the store and the other girl would smile or wave at my daughter, who would wave back.  This went on for a while until my little girl finally asked me why the other girl kept staring at her.  I told her that I didn't know.  She immediately responded, nonchalantly, "Maybe it's because I'm cute."  I couldn't argue with that!

If there's one thing my 3 year old is, it's confident.  Or, maybe she's so confident because she's 3.  Either way, I love it!!
